Tim's Texas 2 Step BBQ Smoked Ribs

  • 1/2 Cup of Tim's Texas 2 Step BBQ Citrus Rub
  • 1 Rack of Baby Back or St. Louis Ribs
  • 1 Cup of Tim's Texas 2 Step BBQ Sauce
  1. Prepare the ribs by taking off the membrane on the backside of the ribs.
  2. Rinse off the meat, then pat dry with a paper towel.
  3. Generously spread the BBQ Citrus Rub on both sides of the ribs. You can let the ribs sit and marinate for as long as you like. I usually let them sit for as long as it takes to get the smoker ready.
  4. Once the smoker is ready and up to 225 - 250 degrees. Place in the smoker and let cook for 3 hours. Make sure you check the fire and the ribs periodically. 
  5. After 3 hours of cooking, I then begin to brush on my BBQ sauce to glaze. Do this every 10 to 15 minutes for the next hour. This will build an incredible crust on the ribs. 
  6. Test to see if ribs are ready, take your tongs lengthwise to your ribs. When the tip of the tongs are in the middle lift the rack, if the ribs bend easily they are ready. If they stay straight or bend just a little leave the ribs on until they are done.
  7. Let the ribs rest for 5 minutes before eating.
