Grilled Corn with BBQ Citrus Rub Butter

The Grilled Corn with BBQ Citrus Rub is a great side to the perfect BBQ! This butter can also be used on steaks, fish and vegetables. 


  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2 tbs of Tim's Texas 2 Step BBQ Citrus Rub
  • 8 ears of corn, shucked
  • 1 tbs vegetable oil


  1. Prepare grill for medium-high heat. Mix butter and BBQ Citrus Rub in a small bowl. Set butter aside.
  2. Brush corn with oil and grill, turning often, until it is tender and charred in spots. 5 - 8 minutes.
  3. Transfer corn to a large platter or bowl and spread with reserved butter, dividing evenly.
  4. You can make the BBQ Citrus Rub butter 1 day ahead. Cover and chill. Bring to room temperature before spreading over grilled ears of corn.

S'more Cones

S'more Cones are the perfect dessert to finish off the perfect BBQ! 


  • 12 sugar cones
  • 12 pieces of milk chocolate
  • 12 marshmallows
  • 1 Jalapeno Popper Holder or other stand that will hold the cones upright


  1. Place one piece of chocolate in each cone. 
  2. Top each chocolate with a marshmallow. 
  3. Place each cone in a jalapeno popper holder and place in the oven or on the grill.
  4. Slowly cook until marshmallow is slightly brown. 

Sopapilla Cheesecake


  • 16 oz of cream cheese
  • 2 sheets of puff pastry dough
  • 1 cup of sugar
  • 1 tbs of honey
  • 1 tsp vanilla
  • 1/2 cup of butter, melted
  • 1/2 cup of cinnamon sugar


  1. Using a 9 x 13 baking pan, place 1 sheet of puff pastry dough in the bottom of the pan.
  2. Place in oven and bake until pastry is light brown and flaky. 
  3. Pull out of the oven and let cool.
  4. Mix together the cream cheese, sugar, honey and extract. 
  5. Spread the mixture over the puff pastry.
  6. Place the second sheet of puff pastry on top of the mixture. 
  7. Pour one stick of melted butter over the top.
  8. Sprinkle the top with about 1/2 cup of the cinnamon sugar mixture.
  9. Bake at 350 degrees for 30 minutes. 

Broccoli Salad

Salad Ingredients

  • 5 to 6 cups of fresh broccoli florets
  • 1 cup of frozen peas, thawed (optional)
  • 1/2 cup of raisins
  • 1/2 cup of sunflower seeds
  • 1/2 cup of cooked crumbled bacon
  • 1/4 cup of red onion, chopped

Dressing Ingredients: 

  • 1 cup of mayonnaise
  • 2 tbs of vinegar
  • 1/4 to 1/2 cup of sugar
  1. Combine broccoli florets, raisins, sunflower seeds, crumbled bacon, chopped onion, and peas in a large serving bowl.
  2. Toss to combine.
  3. In a separate bowl or large cup, whisk together mayonnaise, vinegar and sugar. 
  4. Add dressing to the salad and toss to mix well. 
  5. Chill thoroughly before serving.
