Peach Cobbler

Ingredients:

  • 1 stick (4 ounces) butter, melted
  • 1 cup, plus 3 tbs granulated sugar; divided
  • 1 cup all-purpose flour
  • 1 tbs baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1 tbs vanilla extract
  • 2 ripe peaches, peeled, pitted, thinly sliced
  • 1 tsp cinnamon

Directions:

  1. Heat oven to 375 degrees
  2. Pour melted butter into a 2-quart baking dish (11 x 7 or 8-inch square)
  3.  In a mixing bowl, combine 1 cup of the sugar, the flour, baking powder and salt; stir to blend. 
  4. Stir in the milk and vanilla until blended
  5. Pour the batter over the melted butter.
  6. Toss the peaches with the remaining 3 tbs of sugar and 1/2 tsp of cinnamon. 
  7. Arrange the peach slices over the batter. 
  8. Bake for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. The top will be browned and the cake will begin to pull away from the sides of the pan. 
  9. Serve warm with a little heavy cream, whipped topping, or scoop of vanilla ice cream. 

Chimichurri Sauce

Ingredients:

  • 1 1/2 cups (packed) fresh Italian parsley
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 2 cup (packed) fresh cilantro
  • 2 cups garlic cloves, peeled
  • 3/4 tsp dried crushed red pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp salt

Directions:

  1. Puree all ingredients in a food processor. 
  2. Transfer to bowl. Can be made 2 hours ahead. Cover and let stand at room temperature. 

Tim's BBQ Baked Beans

Ingredients:

  • 6 slices of bacon, diced
  • 1 large onion, diced
  • 2 tbs of Tim's Texas 2 Step BBQ Citrus Rub
  • 2 large cans of Bush's Baked Beans or 2 #10 cans
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1/2 cup ketchup
  • 2 tbs yellow mustard
  • 1 cup Tim's Texas 2 Step BBQ Sauce

Directions:

  1. Saute onions and bacon together until bacon is brown and onions are translucent
  2. Mix all ingredients together
  3. Bake at 250 degrees for 1 hour or cook in crockpot on high for 4 - 5 hours

Jalapeno Popper Dip

Ingredients:

  • 6 slices bacon, diced
  • 2 (8 ounce) packages cream cheese, soften
  • 1 cup mayonnaise
  • 1 cup shredded colby-jack cheese
  • 1 1/2 cups of Tim's Texas 2 Step Fire Roasted & Smoked Jalapeno's (chopped)
  • 1/4 cup butter, melted

Directions:

  1. Preheat oven to 250 degrees
  2. Cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Remove bacon with a sliced spoon to a plate lined with paper towels to drain. 
  3. Stir bacon, cream cheese, mayonnaise, colby-jack cheese and jalapeno peppers together in a bowl; spread into a 9-inch round baking dish.
  4. Mix crackers and butter together in a bowl; spread over the top of the cream cheese mixture. 
  5. Bake in pre-heated oven until bubbly, 20 to 30 minutes.
