Tim’s Tip on Steak

Make sure to let your steak rest 5 to 10 minutes after cooking. If you cut into the meat without the rest time all the juices will flow out along with all the flavor.

Tim's Tip on Ribs

Season ribs with Tim's Texas 2 Step Citrus Rub and smoke for 4 hours at 250° F. During the last hour, brush on my BBQ Sauce every 15 minutes to glaze and build an incredible crust.

Tim's Tip on Brisket

Smoke your brisket to 145° F. then triple wrap brisket in foil, continue to cook/smoke until internal temp is to 195° F. Your brisket will have a great crust and be moist and tender every time.

Tim's Tip on Prime Rib

Before cooking let rib roast come to room temperature. Season liberally with Tim’s Texas 2 Step Butcher’s Grind Rub, Place in oven at 375° F. Cook for 1 hour and then shut the oven off and let roast sit in oven (do not open the door) 30 minute before serving (if needed) turn oven back on and cook to desired temperature 130°-135° F is Med Rare. Remember to let rest before slicing.

Tim's Tip on Salsa

1. Lightly toss all your vegetable in olive oil.
2. Place all your vegetables on grill at med high heat, I like to get a light char on the vegetables so 2 to 3 minutes on each side. 
3. Once the veggies are charred to your liking, remove from grill and finish your salsa in food processor with the rest of your fresh ingredients.
